Tips
Use a pastry brush to evenly oil the air fryer basket and wedges for crispier results.
A zip-top plastic bag can replace bowl tossing for the seasoning step to minimize cleanup.
Lime juice in the mayo can be made ahead and tastes better after chilling for 30 minutes.
Good to Know
Spicy mayo keeps refrigerated for up to 4 days. Cooked wedges best enjoyed immediately but can be reheated in the air fryer at 350 degrees F for 2-3 minutes.
Spicy mayo can be made up to 1 day ahead. Sweet potatoes can be cut and stored submerged in water for up to 4 hours before cooking.
Serve immediately while wedges are warm and crispy, with spicy mayo for dipping on the side.
Common Mistakes
Skip oiling the air fryer basket to avoid sticking and uneven browning.
Overcrowd the basket to prevent proper air circulation and crisping.
Forget to flip wedges halfway through cooking to avoid undercooked bottom sides.
Use excessive oil to prevent soggy wedges instead of crispy ones.
