Avocado and Buckwheat Baby Puree with Dried Fruit

Creamy avocado puree combined with cooked buckwheat, stewed dried apricots and dates. A nutrient-dense first food for babies blending fruit sweetness with mild grains. Buckwheat hydrated overnight, then simmered with water. Dried fruits softened separately to preserve texture and flavor before blending together.
Ingredients
- ½ avocado, halved
- 1 tablespoon buckwheat, hydrated overnightrice1:1graingluten-free

- 2 dates, pitted
- 2 apricots, dried
- 14 tbsp water, for buckwheat
- 10 tbsp water, for dried fruits

Bring water to a boil, add hydrated buckwheat and simmer for 15 minutes until tender.

In a separate pot, bring water to a boil, add pitted dates and apricots without seeds and simmer for 10 minutes.

Drain both preparations of water, peel the dried fruits if needed, and pass through a food mill or blender with avocado.

Add cooked buckwheat and blend further or serve immediately.

Optionally stir in yogurt if the puree is too thick or too sweet.
