  3. 3

Add rice and cook for 12-13 minutes.

  4. 4

Drain rice in a sieve, return to pan, cover with lid and set aside.

  5. 5

While rice cooks, halve, peel and thinly slice the onion.

  6. 6

  7. 7

Peel and grate the garlic or use a garlic press.

  8. 8

    Roughly chop the peanuts.

  9. 9

Heat oil in a large frying pan on medium-high heat.

  10. 10

When oil is hot, add beef mince and cook until browned, breaking it up with a spoon. Drain excess fat.

Tips

Tip 1

Break up beef mince with a spoon while cooking to ensure even browning.

Tip 2

Drain excess fat from cooked mince for a less greasy sauce.

Tip 3

Check beef is no longer pink in the middle before seasoning.

Tip 4

Serve peanuts on the side or mixed in based on preference.

Tip 5

Rice can be made ahead and reheated gently before serving.

Good to Know

Storage

Store leftover stir-fry in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan with a splash of water. Store cooked rice separately.

Make Ahead

Cook rice up to 1 day ahead. Prepare vegetables (onion, garlic, green beans, peanuts) up to 4 hours ahead and store in separate containers.

Serve With

Serve immediately in bowls with peanuts sprinkled on top or on the side for those who prefer them. Add extra black bean sauce if desired.

Common Mistakes

Watch

Do not skip draining excess fat from the beef to avoid a greasy sauce.

Watch

Do not overcook vegetables during stir-frying to avoid a mushy texture.

Watch

Do not skip seasoning the beef with salt and pepper after browning to avoid bland mince.

Watch

Do not allow sauce to reduce too long to avoid it becoming overly thick.
