Chicken Enchilada Lasagna Bundles

Lasagna noodles rolled with seasoned chicken, Monterey Jack cheese, and sour cream, layered with enchilada sauce and green chilies, then topped with melted cheddar. Baked until heated through and served with warm sauce and extra sour cream on the side.
Ingredients
- 12 uncooked lasagna noodles
- 2 10 ounce cans enchilada sauce
- 4 ½ ounces chopped green chilies
- 1 medium tomatoes, chopped
- 2 cups diced cooked chicken

- 1 cup sour cream
- 1 cup shredded cheddar cheese

Heat oven to 350 degrees and grease a 13x9 baking dish.

Cook lasagna noodles according to package directions and drain.

Mix enchilada sauce, chopped green chilies, and chopped tomato in a bowl.

Mix diced cooked chicken, Monterey Jack cheese, chopped green onion, and sour cream in another bowl.

Spread about half cup of sauce mixture into the prepared baking dish.

Spread about one teaspoon of sauce mixture over each noodle, then spread evenly with about one-quarter cup of chicken mixture.

Roll up each noodle and place seam side down on the sauce in the dish.

Spoon about one cup of sauce over the bundles and sprinkle with shredded cheddar cheese.

Cover and bake 40 to 45 minutes or until hot in the center.

Heat remaining sauce in a saucepan and spoon over bundles before serving with additional sour cream.
Tips
Ensure chicken is fully cooked and diced uniformly for even distribution in each bundle.
Do not overfill noodles to prevent tearing or bundles coming apart during rolling.

Cover and refrigerate up to 3 days. Reheat covered at 350 degrees until heated through.
Assemble bundles, cover, and refrigerate up to 24 hours before baking.
Serve immediately with warm enchilada sauce and additional sour cream on the side.
