Ingredients

- ¼ tsp sea salt
- 1 cup dates, pitted
- 1 ¼ cups raw cashews, soaked
- ¾ cup coconut cream, full-fat, chilled
- ½ cup maple syrup
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp peppermint extract(optional)
- ¼ cup packed fresh mint leaves
- ½ tsp spirulina, Tropeaka brand

Combine walnuts, cacao powder, sea salt, and pitted dates in a blender or food processor. Blitz until the mixture becomes crumbly but sticky.

Transfer the base mixture into a lined square baking tin and press down firmly to form an even layer.

Add all filling ingredients (soaked cashews, coconut cream, maple syrup, lemon juice, vanilla extract, peppermint extract, fresh mint leaves, and spirulina) into a blender and blend until completely smooth and creamy.
