Chocolate Chip Cream Cheese Cookie Bars

Butter-flavored shortening and two sugars create a tender chocolate chip cookie base for these bars. A smooth cream cheese filling is sandwiched between the bottom layer and crumbled dough topping, then baked until a toothpick comes clean. Cool completely before cutting.
Ingredients
- 1 c butter flavored shorteningbutter1:1neutral
shortening adds neutral flavor
- ¾ c sugar
- ¾ c brown sugar
- 2 eggs
- 2 t vanilla
- 2 ¼ c flour
- ½ t baking soda
- ¾ t salt
- 1 c chocolate chips
- 2 8 oz packages cream cheese, softened
- 1 c sugar

Cream together shortening and sugars.

Add eggs and vanilla, stir.

Sift in flour, baking soda and salt and mix.

Stir in chocolate chips.

Spread half of the dough into a greased 9 x 13 pan.

Whip the cream cheese until smooth.

Add sugar and eggs and mix well.

Pour over cookie dough in pan.

Crumble remaining cookie dough on top of cream cheese.

Bake at 350 for 35 to 40 minutes, until toothpick comes out clean.

Cut into bars and serve.

Cookie dough can be mixed up to 1 day ahead, covered and refrigerated. Assemble and bake when ready.

Common Mistakes
Do not overbake or filling may brown excessively; check at 35 minutes to avoid dry bars.
Do not skip cooling completely before cutting or bars will crumble.
