Crispy Baked Potatoes with Chorizo and Cheddar

Ingredients
- 2 baking potatoes
- olive oil, for rubbing and brushing
- 1 bunch green onions
- 2 cooking chorizo sausages (150g), sliced in half lengthways, then each piece halvedspanish chorizo1:1

Heat oven to 400°F/350°F fan/gas 6.

Prick potatoes all over with a fork, rub with oil, sprinkle with salt.

Bake on a tray on middle shelf for 1 hour or until cooked through.

Heat a griddle pan or grill until hot.

Brush green onions with oil and griddle or grill for 3-4 minutes until tender and slightly charred. Remove and keep warm.

Griddle or grill chorizo for 3-4 minutes until crisp.

Make a cross in the top of each potato and push the sides to open the tops.

Fill with butter if using and cheese, then return to oven to melt for 5 minutes.
