Easy Apple Crumble with Wholemeal Topping

Soft, cinnamon-spiced mashed apples topped with a buttery wholemeal and oat crumble. Granny Smith apples are microwaved until tender, then combined with maple syrup and cinnamon, finished with a golden-baked crumble topping of wholemeal flour, rolled oats, rapadura sugar, and melted butter.
Ingredients
Instructions
- 1
Preheat oven to 350°F fan forced.
- 2
Core granny smith apples and place in a microwave safe glass dish with ⅓" water. Microwave covered until soft, approximately 6-8 minutes. Work in batches if needed.
- 3
While apples cook, combine wholemeal flour, rolled oats, rapadura sugar, and melted butter. Mix briefly, leaving butter clumps distributed throughout the flour and sugar.
- 4
Remove apples from microwave and cool. Drain remaining liquid.
- 5
Squeeze soft apple flesh back into the dish and scrape flesh from skin with a spoon.
- 6
Lightly mash the apple to your preferred consistency.
- 7
Stir in maple syrup and cinnamon.
- 8
Transfer apple mixture to an enamel pie dish.
- 9
Top with crumble mixture and bake for 20-25 minutes until golden.
Tips
If apple skin does not come away easily after microwaving, cook a little longer before peeling.
Keep butter clumps intact in the crumble topping for a better texture; avoid overmixing.
Good to Know
Cover and refrigerate up to 3 days. Reheat gently before serving.
Assemble crumble and refrigerate up to 8 hours before baking. Bake directly from cold, adding 2-3 minutes if needed.
Warm, optionally with yogurt or custard.
Common Mistakes
Overmix the crumble topping to avoid a dense, cake-like layer; butter clumps create the desired texture.
Skip draining microwave liquid to avoid a soggy filling.
