Easy Sweetcorn Fritters with Fresh Salsa

Crispy pan-fried sweetcorn fritters made with self-raising flour, egg, and soured cream. Served with a vibrant fresh salsa of cherry tomatoes, avocado, red chilli, lime, coriander, and spring onions. Quick weeknight sides or light meal option.
Ingredients
- ¾ cups self-rising flour, siftedplain flour plus baking powder100g flour + 1 tsp baking powdergluten

- 1 free-range egg, beaten
- 3 tbsp soured cream
- 2 tbsp whole milk(optional)
- 2 sweetcorn, kernels removedfrozen sweetcorn kernels1:1vegetables

- 1 bunch green onions, sliced
- olive oil, for frying
- 1 handful cherry tomatoes, finely chopped
- 1 avocado, finely chopped
- 1 red chilli, deseeded and finely chopped
- 1 lime, juiced
- 2 tbsp extra-virgin olive oil
- 1 handful fresh coriander, chopped
- salt, pinch
Instructions

Sift flour into a large mixing bowl with a pinch of salt. Make a well in the centre.

Add the beaten egg and soured cream to the well. Mix gradually with a wooden spoon, adding milk if the mixture seems thick.

Mix in the sweetcorn kernels and half the green onions.

Heat a little olive oil in a large non-stick frying pan over medium heat.

Fry heaped tablespoons of the mixture in batches for 2-3 minutes, turning halfway, until golden brown.

While fritters cook, combine cherry tomatoes, avocado, red chilli, lime juice, extra-virgin olive oil, coriander, and remaining green onions in a bowl. Season to taste.

Serve fritters with the fresh salsa.
Tips
Use a non-stick frying pan to prevent sticking and reduce oil needed
Don't overmix the batter to keep fritters light and fluffy
Prepare salsa ingredients just before serving to keep avocado from browning
Good to Know
Store cooled fritters in an airtight container in the refrigerator for up to 2 days. Reheat in a 180°C oven until warmed through.
Prepare the batter up to 2 hours ahead, cover and refrigerate. Prepare salsa ingredients separately, assemble salsa just before serving.
Serve warm fritters immediately with the fresh salsa on the side or spooned on top.
