Instructions

    Sift flour into a large mixing bowl with a pinch of salt. Make a well in the centre.

    Add the beaten egg and soured cream to the well. Mix gradually with a wooden spoon, adding milk if the mixture seems thick.

    Mix in the sweetcorn kernels and half the green onions.

    Heat a little olive oil in a large non-stick frying pan over medium heat.

    Fry heaped tablespoons of the mixture in batches for 2-3 minutes, turning halfway, until golden brown.

    While fritters cook, combine cherry tomatoes, avocado, red chilli, lime juice, extra-virgin olive oil, coriander, and remaining green onions in a bowl. Season to taste.

    Serve fritters with the fresh salsa.
