Oven-Baked Fried Rice with Bacon

One-dish fried rice baked in the oven with uncooked rice, chicken or vegetable stock, frozen vegetables, bacon, and sesame oil. No stovetop stirring required. Rice cooks evenly in a covered baking dish, then finishes uncovered so the bacon browns. Ready in about an hour with minimal hands-on time.
Ingredients
- 1 ½ cups long grain white rice, uncooked
- 2 cups chicken or vegetable stock, low sodium

- 1 tbsp Chinese cooking wine, dry sherry, mirin or sake
- 2 cloves garlic, minced
- 2 cups frozen diced vegetables, carrots, peas, corn mixfresh vegetables1:1texture

- 1 ¼ cups bacon or ham, uncooked, chopped
- 1 tbsp sesame oil
- ½ cup green onion, finely sliced, 2-3 stems

Preheat oven to 400°F or 350°F fan.

In a baking dish approximately 22 by 12 ⅔", combine rice, stock, soy sauce, cooking wine, minced garlic, frozen vegetables, and white pepper. Stir and spread rice evenly.

Scatter chopped bacon over the surface.

Cover with foil and bake for 40 minutes.

Remove foil and bake uncovered for 15 minutes until bacon is browned and liquid is absorbed.

Cover loosely with foil and rest for 10 minutes.

Add green onion and sesame oil, then fluff rice with a fork and serve.
Tips
Rice will appear wet after baking but will absorb residual moisture and soften during the 10-minute rest.
Use store-bought chopped bacon for convenience.
Good to Know
Refrigerate in airtight container up to 4 days. Reheat gently in oven with a splash of water.
Assemble unbaked dish (without bacon) up to 8 hours ahead. Add bacon and bake when ready.
Serve hot, optionally garnished with additional sesame oil or soy sauce.
