Oat Chocolate Peanut Butter Bars

Rustic no-bake oat bars layered with melted dark chocolate. Combines rolled oats, peanut butter, banana, and crushed hazelnuts, bound with egg and bound with sweetener. Baked until firm, then topped with dark chocolate and cut into chewy bars. A simple, whole-grain treat.
Ingredients
- 1 ¾ cups rolled oats

- 1 whole egg
- 1 ¾ oz hazelnuts, crushed
- 2 oz dark chocolate
- olive oil, splash
- 1 teaspoon Stevia

Preheat oven to 350°F.

Combine oats, banana, egg, a splash of olive oil, and peanut butter in a mixing bowl. Blend with a hand mixer.

Crush hazelnuts and add to the bowl. Season with Stevia to taste.

Line a baking sheet with parchment paper. Spread the mixture into an even square approximately ⅓" thick.

Bake for about 30 minutes.

While baking, melt dark chocolate either over a double boiler with simmering water or in the microwave. If using microwave, chop chocolate into pieces and heat at 600 watt for about 30 seconds.

Let chocolate cool slightly, then spread over the baked square using a spatula.

Once chocolate is set, cut into equal bars.
Tips
Chocolate can be melted gently over a double boiler to avoid scorching, or microwaved in short intervals for better control.
