Preheat oven to 350 degrees F. Prepare a 9x13 casserole dish with non-stick cooking spray.

  2. 2

Cook ground beef and onions in a stock pot or dutch oven over medium heat until beef browns and crumbles. Stir in garlic. Drain well and return to pot.

  3. 3

Add tomatoes and seasonings to the beef and stir to combine.

  4. 4

Add cabbage over the sauce and cover the pot. Stir occasionally until cabbage begins to wilt.

  5. 5

  6. 6

Bake covered with aluminum foil for 20 minutes. Remove foil, add cheese, and cook uncovered for 5 to 10 minutes.

Tips

Tip 1

Drain ground beef well after browning to remove excess fat and reduce liquid in final dish.

Tip 2

Wilting cabbage before transferring to casserole dish speeds up baking time.

Tip 3

Stir cauliflower rice into mixture rather than layering to distribute evenly and prevent drying out.

Good to Know

Storage

Cover and refrigerate up to 4 days. Freeze up to 3 months.

Make Ahead

Assemble casserole completely through cheese topping, cover, and refrigerate up to 24 hours. Bake from cold, adding 5 to 10 minutes to covered baking time.
