One-Pot Creamy Chorizo Spaghetti

Danish one-pot spaghetti with chorizo, sun-dried tomatoes, and creamy spiced cheese. Roasted vegetables, tomato passata, and broth simmer together with pasta, finished with pikantost for richness. Ready in about 12 minutes of cooking.

  • 2 spsk oregano
  • 7 oz chorizo, finely chopped

Instructions

    Peel and finely chop onions and cut carrots into rough chunks.

    Cut chorizo into small pieces.

    Warm oil in a pot. Add onions and carrots. Toss with oregano.

    Add all ingredients except spaghetti, tomato passata, and water. Stir for a couple minutes over medium heat.

    Add spaghetti, tomato passata, and water. Stir. Cover and simmer for about 12 minutes, stirring occasionally, until pasta is al dente.

    Just before serving, stir in pikantost. Top with fresh chopped parsley.
