Tips
Monitor caramel closely during cooking to avoid burning; once golden brown, it darkens quickly.
Use a water bath to ensure even, gentle cooking of custard.
Do not stir caramel after it boils to prevent crystallization.
Good to Know
Cover and refrigerate up to three days.
Prepare flans through baking step; refrigerate. Invert and garnish just before serving.
Serve warm or chilled with peaches and fresh blueberries. Mint garnish optional.
Common Mistakes
Do not stir caramel after boiling to avoid crystallization and grittiness.
Do not overbake custard or it will become rubbery rather than creamy.
