Thermomix Condensed Milk Cookies

Soft, buttery cookies made with sweetened condensed milk and self-raising flour, mixed in a Thermomix. Simple three-ingredient base welcomes any flavourings or add-ins. Baked until golden and cooled on wire racks. Store up to a week in an airtight container.
Ingredients
- 35 tbsp butter, softened
- ¾ cups superfine sugar
- 1 ¾ cups sweetened condensed milk

Preheat oven to 350°F fan-forced.

Grease and line baking trays.

Place butter and superfine sugar into Thermomix bowl and mix at Speed 5 for 1 minute, scraping down sides after 30 seconds.

Add condensed milk and mix at Speed 5 for 30 seconds.

Add 250 grams self-rising flour and mix at Speed 6 for 20 seconds. Scrape down bowl.

Add another 250 grams self-rising flour and mix at Speed 6 for 20 seconds.

Add final 250 grams self-rising flour and mix at Speed 6 for 20 seconds, using spatula to assist if needed.

Divide dough between bowls and add chosen flavourings or add-ins.

Roll into teaspoon-sized balls and place on prepared trays. Press lightly with fork.

Bake for 10 to 12 minutes until golden.

Cool on trays for 10 minutes, then transfer to wire rack to cool completely.
