Lemon Blueberry Mint Iced Tea

Refreshing iced tea combining steeped plantation mint with a homemade blueberry-lemon puree. Fresh blueberries and lemon juice are processed into a smooth base, then combined with chilled mint tea and ice. Garnished with lemon wedge and fresh mint leaves for a bright, fruity beverage.
Ingredients
- 1 bag Bigelow Plantation Mint teaother mint tea varieties1:1beverage
- 2 c water
- 2 Tablespoons fresh blueberries
- 1 Tablespoon fresh squeezed lemon juice
- 2 Tablespoons sugar
- 1 wedge lemon(optional)
- mint leaves, fresh(optional)
Instructions

Heat water in a teapot until just simmering, do not boil.

Place tea bag in a large mug and pour simmering water over it. Steep for 5 minutes.

While tea steeps, add blueberries, lemon juice, and sugar to a food processor. Process until smooth. Strain solids if desired or leave them in.

Fill a tall glass with ice cubes. Add blueberry puree.

Slowly pour steeped tea over ice and puree. Mix gently with an iced tea spoon.

Add additional ice if needed. Garnish with lemon wedge and mint leaves.
