Air Fryer Falafel with Fresh Herbs and Spices
Middle Eastern cooking relies on five things: tahini, sumac, za'atar, pomegranate molasses, and the right temperature for flatbread. That's 450F to 500F.
Forget what you think you know. This isn't just hummus and pita. Syrian muhammara needs 3 tablespoons of pomegranate molasses to 2 cups walnuts. Lebanese kibbeh requires bulgur soaked exactly 30 minutes. Persian rice demands a 45-minute soak before the 20-minute parboil.
The backbone is simple. Toast your spices first. Always. Cumin seeds hit a dry pan for 2 to 3 minutes until they smell like popcorn. Coriander goes 30 seconds less. Your falafel falls apart because you used canned chickpeas. Soak dried ones for 24 hours, then grind them raw with your herbs.
Temperature matters more than time. Shawarma needs 425F for the first 20 minutes, then 375F to finish. Flatbreads want screaming heat. Your oven's max setting, usually 500F to 550F. They cook in 3 to 4 minutes flat.
Ratios define everything. Hummus needs 1/4 cup tahini per can of chickpeas. Too much and it's bitter. Too little and it's just bean dip. Baba ghanoush wants 3 large eggplants to 1/3 cup tahini. Tabbouleh is 3 parts parsley to 1 part bulgur, not the other way around.
This food feeds groups. A mezze spread needs 8 to 12 small plates. Figure 3 to 4 ounces per person per dish. One batch of hummus serves 6 as part of a spread, 3 if it's the main event.
You'll dirty every cutting board you own. Worth it. Most prep happens upfront. Chickpeas soak overnight. Yogurt drains 4 to 6 hours for labneh. Pickled turnips need 5 days minimum. But actual cooking? Usually under an hour.
Start with za'atar-roasted vegetables at 425F for 25 minutes. Move to falafel once you nail the spice balance. Save kibbeh and stuffed grape leaves for when you have time. They're weekend projects, not weeknight solutions.
